Creamy Sweet Potato Soup

  • 2 Tbsp. (30 ml) cooking oil
  • 1 onion, finely diced
  • 1 Tbsp. (15 ml) Rajah Mild & Spicy Curry Powder
  • 1 tsp (5 ml) Robertsons Garlic Salt
  • 4 large sweet potatoes, peeled and cubed
  • 2 potatoes, peeled and cubed
  • 7 cups (1, 75 L) water
  • 1 Knorrox Chilli Beef Stock Cube
  • 2 Tbsp. (30 ml) Knorr Minestrone Soup


  • Heat oil in a pan and fry the onion until soft.
  • Add the Rajah Mild & Spicy Curry Powder and Robertsons Garlic Salt and fry for one minute to release the aroma and flavour.
  • Add the sweet potatoes, potatoes , water and Knorrox Chilli Beef Stock Cube.
  • Stir well and bring to the boil then reduce the heat and allow to simmer for 30 minutes or until the vegetables are soft.
  • Just before done, mix the Knorr Minestrone Soup with four tablespoons of water to make a smooth paste and then add it to the soup and allow to simmer for five minutes stirring continuously until thickened.
  • Remove the soup from the heat and mash until smooth with a potato masher.
  • Serve with slices of thick crusty bread.
