Spinach and Potato Curry

Ingredients

  • 2 Tbsp. (30ml) oil
  • 1 onion, sliced
  • 1 Tbsp. (15 ml) Rajah All in One Curry Powder
  • 4 potatoes, cut into chunks
  • 1 tsp (5 ml) Robertsons Coriander
  • 2 chilies, seeded and chopped
  • 1 tsp (5 ml) Robertsons Ginger
  • 2 tomatoes, chopped
  • 3 cups (750 ml) water
  • 1 packet Knorr Curry Vegetable Soup powder
  • 300 g spinach, roughly chopped

Instructions

  • Fry onion in oil until soft.
  • Add Rajah All in One Curry Powder and fry for a minute to release flavour.
  • Add potatoes, Robertsons Ginger, Robertsons Coriander, tomatoes, water and Knorr Curry Vegetable Soup Powder. Cook and bring to the boil, then simmer for 10 minutes.
  • Add spinach and simmer over a low heat for a further 15 minutes or until the potatoes are cooked through.
  • Serve with roti or as a bunny chow.
