Sweet Potato and Spinach Sishebo

Ingredients

  • 1 Tbsp. (15 ml) cooking oil
  • 1 onion, chopped
  • 1 Tbsp. (15 ml) Rajah Medium Curry Powder
  • 1 tsp (5 ml) Robertsons Steak & Chop Spice
  • 2 tomatoes, chopped
  • 1kg sweet potatoes, peeled and cubed
  • 1½ cups (375 ml) water
  • 1 Knorrox Chicken Stock Cube
  • 1 bunch spinach, cleaned and chopped
  • 2 Tbsp. (30 ml) Knorr Minestrone Soup

Instructions

  • In a pot, brown the onion in oil until soft.
  • Add the Rajah Medium Curry Powder, Robertsons Steak & Chop Spice and tomatoes and fry for 2 minutes.
  • Add the sweet potatoes, water and the Knorrox Chicken Stock Cube, stir well and bring to the boil.
  • Turn down the heat and allow to simmer for 30 minutes with the lid on.
  • Mix the Knorr Minestrone Soup with 4 tablespoons of water to make a smooth paste then add it to the pot together with the spinach and allow to cook for a further 5 minutes.
  • Served with rice or pap.
