Sweet Potato and Spinach Sishebo

1 Tbsp. (15 ml) cooking oil
1 onion, chopped
1 Tbsp. (15 ml)
Rajah Medium Curry Powder
1 tsp (5 ml)
Robertsons Steak & Chop Spice
2 tomatoes, chopped
1kg sweet potatoes, peeled and cubed
1½ cups (375 ml) water
Knorrox Chicken Stock Cube
1 bunch spinach, cleaned and chopped
2 Tbsp. (30 ml)
Knorr Minestrone Soup
In a pot, brown the onion in oil until soft.
Add the Rajah Medium Curry Powder, Robertsons Steak & Chop Spice and tomatoes and fry for 2 minutes.
Add the sweet potatoes, water and the Knorrox Chicken Stock Cube, stir well and bring to the boil.
Turn down the heat and allow to simmer for 30 minutes with the lid on.
Mix the Knorr Minestrone Soup with 4 tablespoons of water to make a smooth paste then add it to the pot together with the spinach and allow to cook for a further 5 minutes.
Served with rice or pap.
