Blanch your tomatoes in hot water. Blanching not only makes it easier to remove the skin, but also ensures that you don’t lose any nutrition when peeling the tomato. Don’t overcook your vegetables for longer than you need to otherwise they lose nutrition and colour. Cook your vegetables in the shortest amount of time and cook all the vegetable with their skin and/or stalks on as this will increases nutritional content, including fibre.
